Today was day one of four straight days of mac and cheese. Rachael Ray has what she calls master recipes and then she likes to make variations to the master, omitting somethings while adding something different which totally changes them up. All of them will start with a roux. I don't believe I have ever made a roux...I actually say this with a french accent...it was a new skill for both the me and my girl.
Since, I was a little nervous about getting it right, we pre-measured as much as we could so we could follow the direction to a T without having delays.
Her directions were really easy to follow so it went smoothly. I am glad we measured everything ahead of time. We shredded the cheese ourselves. I wasn't sure how many ounces of cheese would make three cups so we were a little short. Oops.
It still mixed up nicely. Again, it made an enormous amount of food, we will be sharing.
Tomorrow we will be halving the recipe since there is no way we can eat the amount it makes. This should help too with the underestimated cheese. Here it is...Mac-n-Cheddar with Broccoli
