#37 Warm Lemon Chicken Sandwich with Arugula and Pears

This one called for kaiser rolls, to make it gluten free we switched kaiser out for Udi's classic french dinner rolls. To toast them I butterflied them and put them in the toaster. They worked great. I will use these in the future for picnic, mini subs.

The chicken, lemon fresh and moist. The arugula, I am not sure if it was out of season so more bitter than normal or if we are not necessarily arugula fans. Overall, the sandwich was good.
